RAINBOW SALAD

Rinse and dry

  • Mixed greens

Peel and Grate

  • Daikon
  • Burdock
  • Beetroot
  • Carrot

(Or anything else you have fresh and in season)

Add

  • Yellow capsicum, chopped or sliced
  • Tomato, chopped and sliced
  • Avocado, chopped
  • Any nuts or seeds

Combine all of the above then add to taste:

  • Lemon juice (approximately 1/2 lemon)
  • Apple Cider Vinegar ((approximately 1-2 tsp)
  • Olive or hemp oil (generous splash)
  • Sea salt (large pinch or two)

As you can see, this is very broad, so you can really add in what you have and what’s in season.

So good, so healthy, a great cleansing salad with lots of vitamins, minerals and antioxidants!
